A creamy, crunchy, and slightly sweet broccoli apple salad made with crisp apples, crunchy broccoli, pecans, cranberries, and a tangy yogurt dressing. Perfect for meal prep or gatherings.

Ingredients

2 medium heads fresh broccoli, chopped

1 cup shredded carrots

1/2 small red onion, finely sliced

2 large Gala apples, chopped

1/2 cup pecans, coarsely chopped

1/2 cup dried cranberries

1/2 cup light mayonnaise

1/2 cup low-fat Greek yogurt

1 tbsp lemon juice

1 tbsp sugar

Salt and pepper to taste

Instructions

1. In a large bowl, combine broccoli, carrots, red onion, apples, pecans, and cranberries.

2. In a separate small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, sugar, salt, and pepper.

3. Pour the dressing over the broccoli mixture and toss well to coat.

4. Chill in the refrigerator for at least 30 minutes before serving for best flavor.

Notes

This salad keeps well for up to 3 days in the fridge.

Use sweet apples like Gala or Fuji for best flavor.

Add cooked quinoa for a heartier version.
